Local BBQ expert and certified Judge goes to Atlatnta to participate in the
NBBQ national convention.

March 10, 2004 -- This week the The National Barbecue Association held it's annual convention in
Atlanta Georgia. It is the annual gathering of the world of Barbecue most experience and inexperience
barbecuer's . There were participants from as far as Paris and Stutgard Germany.
A local guru Ed "Smokey" Wilson of "Wilson's Holy Smoke" restaurant soon to
open in Fairfield on the post road, was in attendance for the second year . The event is a hosts
seminars, cooking demonstrations, and a trade show. All in an effort to boost interest and knowledge of
the "Art of Barbecue". Ed says its' an art because like a painting people create what they
think and like as their form of what is pleasing to them. Barbecue is the same, in competitions the
competitors use what they think will please the judges.
Ed has traveled extensively throughout the country for the past 4 years researching the art form (as he
puts it) of Barbecue. He has competed in cookoffs in Maryland, Massachuttes, Vermont, Memphis in May,
Murphysboro Ill., Tennessee. The team he has worked on was the "Smoke Ring". While a member of
the team they won the state championship in Maryland and the New England Regional Championship in
Vermont. Which qualified them two years in a row to compete at the grand daddy of competitions "The
Jack Daniels" in Tennesse, where the team placed in the top ten ( out of 50) teams both years.
Ed has been working on putting project a team together prior to commencing construction and opening of
his first Barbecue "Joint " in Connecticut. He hopes to open before June. He is very involved
the in Barbecue community, acting as the state representative for the New England Barbecue Society, and
as a certified Kanas City Barbecue Society Judge.
